What's For Dinner? Hasselback Potatoes

I am a Pinterest-a-holic.  I found this fun variation of a baked potato and played with my own seasoning.  Sunday nights I like to try and do a stick to your ribs homecooked meal so these potatoes made for the perfect side.

Pre-heat the oven to 450.

Scrub your potatoes.


Slice potatoes in thin slices about 3/4's of the way through, don't slice all the way through.  They should all be attached together at the bottom.  It should look like an accordian or a bloomin' onion.

The cutting of the potatoes was tricky, at least it was for me as I am always worried I am going to cut my fingers off.

 
Drizzle with olive oil and season with your favourite seasoning.
 
We used curry seasoning.
 

 


 
Bake for about 45 minutes.
 


They were crispy on the outside edges and soft and moist on the inside.  It was like a baked potato meets fried potato. 

We served ours with garlic sour cream for dipping, bruschetta bread and steak.  Super tasty, pretty easy, I would make them again.
