Adapted from Betty Crocker.
Cake Mix Cookies
Yields about 4 dozen cookies.
Ingredients:
2 eggs
½ cup of softened margarine or butter
(I skipped the oil and the vanilla and I didn't have them.)
Your favourite frosting/icing
(You could also add chocolate chips, nuts etc. whatever you feel like!)
I made two different cake mixes: chocolate and yellow. |
Directions:
Grease your pans, or lay parchment paper on the pans for easier clean up.
DO NOT FOLLOW DIRECTIONS ON CAKE MIX BOX!
Add eggs and margarine.
Mix thoroughly until smooth. (The yellow cake made a very tight cookie batter!)
Scoop walnut size batter and place on cookie sheets. I scooped equal amount of each mixture for each cookie to have a marble cake effect. (I used about half a walnut size scoop for each flavour) I could have “marbleized’ the cookie batter but was tired and in a hurry. This gives the taste effect regardless. Yum.

Bake for 7 to 8 minutes.
For years I never used a timer. Not sure why not, greatest invention ever. This bad boy came from Dollarama. It has a magnent and a clip in case you walk away ... which I do a lot. |
Take out of oven and leave on cookie sheet for 2 to 3 minutes.
Scoop off of cookie sheet, place on a baking rack or a tea towel and allow to cool.
Once cool use your favourite icing to make sandwich cookies or to enjoy alone.
Pour a tall glass of cold milk and dig in! (Even if you have to bring the cookies somewhere the baker always has to have to have a taste test!)
Next time if I am pressed for time it's getting made as a cake and dumped in a pan. A little less fussing that way. Cookies however are easier to hand out, no need for plates and forks... Overall these were easy, fun, a bit time consuming but yummy! (I would love to try making these with a cherry chip cake mix.)
