(Makes 6 to 10 servings. We get three dinners out of this recipe for two adults, we like our meatloaf!)
I was too tired to take pictures, but rest assured, it was tasty!
Preheat oven 350F. Takes about 1 hour. My oven is old so use the meat thermometer to be certain!
Spray two loaf pans with cooking spray. (You could probably skip this, but I feel it helps with cleanup.)
4 pounds of lean ground beef (works well with a pound of lean ground pork too!)
1 egg
1 cup of BBQ Sauce. (I use our favourite President’s Choice Smokin' Stampede Beer and Chipotle.) Plus extra to squirt on top.
1 cup of quick oats
1 large onion, chopped and sautéed in olive oil
A heavy sprinkle of garlic powder
A sprinkle of cayenne
Chop and sauté a large onion in olive oil.
Put to the side to cool a bit.
Wash your hands again and mix ingredients by hand in a large bowl. No particular order, just throw them all in there!
Stuff into two loaf pans. Drizzle some BBQ sauce on top for an extra kick!
I use the meat thermometer to be certain. My oven and size of the meatloaves took about an hour. I start the loaves off with tin foil covering the pan and remove the tin foil after 30 minutes. I didn’t want to scorch the top of the loaves. My meatloaves produced a lot of juice, too much for my liking so I drained most of it off when they were done. The meatloaves were super moist, the BBQ sauce adds a bit of sweetness and tanginess.
Serve with mashed potatoes or roasted veggies. (We are big on adding Club House Curry Powder and olive oil to our roasted potatoes to give them a kick! )
