12tin cupcakery

Friday night dessert!!!

Contrary to what it may seem in my recent entries, I have not been indulging in treats as I used to. My most favouritist treat to indulge in is a cupcake, more specifically a 12tin cupcakery cupcake12tin cupcakery specializes in gourmet cupcakes, all of which are creative and fun with their amazing combinations and names.  But most importantly they are fresh, sweet and TASTY. 



This sweet lil’ thing is a "Pretty Woman". Buttermilk cupcake topped with butter cream icing. A fresh, light, sponge cake topped with a large dollop of sweet, creamy, butter cream icing.

I love icing.  I eat my cupcake bottoms first, then a few bites of the muffin top with the icing.  Then I finish the top and save as much icing as possible for last.  (12tin has the BEST icing)  I am two years old apparently...  :)

P.S. I skipped my Ripped in 30 today.  I was dead tired.  Plus, I should allow myself at least one day of rest a week.  So I "burnt" calories while eating this delicious cupcake.  :P

Sweet and Savoury Tortilla Chips

I had a craving for sweet and salty. (No, not preggers.)  I saw these yummy squares on Holly's blog the other day and I kept thinking about them.  I didn't have Golden Grahams or anything else cereal related that would have worked, plus I am lazy and didn't want to go out and grab any; so I made do.

Tortilla chips,large marshmallows cut into thirds, a few milk chocolate chips.  Melt in microwave for about 30 seconds.  Sprinkle on a few almonds.

Dollarama

How do I love thee, let me count the ways:

1.You are Canadian owned an operated. 

2.You are friendly to my pocket!!! (I was torn between making this my number one point or not. Nationalism or thrifty? My two things I try to be.) Sure, not everything is a dollar at Dollarama, but it still is less expensive then anywhere else.

3.You have the best-priced chocolate bars and candy. (Chocolate had to be in the Top 3) The other day I went to the Avondale down the road for my work, as I was jonesing for chocolate, and I paid $1.49 for a regular sized bag of Peanut M&M’s. It broke this lil’ol’ cheapskates’ heart. Dollarama sells name brand, regular sized chocolate bars for $0.69, (King size for $1, Avondale King size are $2) that are packaged in Canada and not expired. In fact, Dollarama’s chocolate is usually fresher compared to Avondale’s stale and dusty chocolate bars, because they sell so many of them, they have great turnover.

4.Your cat and dog treats are the cheapest around. Again, not expired and named brand. Milkbone, Hartz and Temptations.

5. You sell Milkbone brand dog toys, for $2. My dog is a champion toy shredder. She tears a toy apart in about 2 minutes, so why spend $10 to $15 on a toy they she will destroy? We have wasted money on supposed “indestructible” toys, I swear she had them ripped apart quicker then the regular toys. It’s like she says: “Challenge accepted.” We stick to the Milkbone toys now to give her, her thrill. Far more economical.

6. I once heard an older family friend talk about how she wished that the Dollarama (dollar stores in general, I believe) were around when she was raising her children as they had a hard time putting food on the table, that a store where you can buy stuff so inexpensively would have been a huge benefit. I think a very tight budget could outfit a house for dishes, cutlery, décor etc using a dollar store. They have inexpensive children’s books, kitchen utensils, school supplies, office supplies, toys, home décor, and seasonal décor. If you didn’t have a lot of money you could find something to use at Dollarama.

7.You have the most inexpensive gift bags/gift wrap/party stuff. Why spend a fortune on something that is literally going to be torn off and thrown out? Dollarama has a nice selection of gift-wrap!

8.You are always neat and tidy. I went to Walmart on my lunch break and it looked like a tornado had run through the place. Then I walked into Dollarama and you were neat, tidy and well organized. I like neat, tidy and organized.

BIGGEST PET PEEVE: People who snub Dollarama because everything is “cheaply made”. Dude. They have brand name stuff in there. Betty Crocker Cooking Utensils, Palomolive dish soap, Milkbone dog treats, etc. Common sense says you may not want to purchase electrical stuff in any Dollar store, but the brand name stuff is safe to use and frankly, the other stuff is decent too. Why spend a fortune on something? Buy the two-pack of fly swatters for a $1, why go to Walmart and pay $4 for one? Dollarama has cute seasonal décor! Why spend $20 on a Hallowe’en sign that some brat in your neighbourhood is going to steal anyways? Buy a cute one for $2. I saw the awesomest M&M Hallowe’en costume for kids today for $3. This costume was nicely made, out of a nice fabric (not felt, like a real fabric) and big enough for a kid to put their winter coat on underneath (we are in Canada, you just never know what your kid will be exposed to Trick or Treating). The kid is only going to fit in it for a year, maybe two: so why spend a fortune?

My only beef with Dollarama is they don’t take coupons. They do however take debit cards now and have gift cards, which is awesome.

Can you tell I am passionate? Dollarama has good stuff! I LURVE Dollarama. (Go ahead and bring this up in conversation with me, I get as worked up as that guy defending Britney.)

Yes, I just wrote a tribute to my love of Dollarama. Yes, I am slightly crazy, but that doesn’t dismiss the fact that the Dollarama is awesome.

Weekend Round Up

Friday evening I started the weekend off with a Bucket List cross off: I rode a horse! You can read about that here: Bucket List Cross Off : I Rode a Horse!
After said horse ride my husband and I went to our friends’ house where we had a nice visit and catch up around the fire. (Cake Mix Cookies)

Saturday morning I rolled out of bed very sore. I can see why cowboys walk the way they do. I did my Ripped in 30 DVD. (Seriously, I had better be in the best shape ever when this is done as it’s kicking my arse.) My husband was off this weekend so we laid around and watched some Veronica Mars Season 3.
Then we got ready for OUR HOCKEY SEASON OPENER!!! I have to say I got really nervous packing my hockey bag. I got so nervous I could only choke down toast for dinner. Once we got to the rink, we watched our league’s opening ceremonies complete with a real life Canadian Olympic Silver Medalist and bagpipes! (I get teary-eyed every single darned time I hear bagpipes.) My husband played the game before me, they lost but I am certain my husband had fun; and there is always next week!

Then my team took to the ice. No matter how nervous I get, as soon as my blades touch the ice, I calm down. (Probably because I am now concentrating solely on not falling on my arse so I no longer have time to worry about anything else.) I was placed on Defense and I had a lot of fun. We had quick shifts so we didn’t get ridiculously tired. I loved being back on Defense. I took power skating this summer and I played summer hockey with our league where they mix minors and majors, which I think helped a lot. While I was feeling rather useless during summer hockey with the majors flying past me, I was told repeatedly it would help my game come winter when I am playing with only the minors: I have to say, they were right. I felt more confident playing this Saturday then I have ever. I felt good. I am not fantastic by any means and I am not boasting or anything, but I feel confident I can play with my fellow players. I do not feel like I am lagging behind like I did last winter season (Which was also my first season playing ever where I was incredibly frustrated that I didn’t come out of the dressing room as a NHL caliber player, which if you saw me I could barely stand in my skates let alone skate, hahaha.)

We ended up winning 2-0, thanks to our stellar goal tender and our team seeming to jive right off the bat. (Which is awesome as it can take a bit for team chemistry to happen). I brought a plate of cookies for my new teammates, which I am told were quite rewarding after a vigorous hockey game. I had to use covert efforts to smuggle the cookies in to the arena and keep them hidden long enough to make sure my team was able to get some. I have learned if you walk into an arena full of adults with a plate of homemade cookies, the vultures come swarming and you are lucky to make it out alive let alone with enough cookies to share with YOUR OWN TEAM. :P 

Sunday morning I rolled out of bed and tackled Ripped in 30 again. I hate Jillian Michaels, but I also love her. In the afternoon, I was a wild woman: I fell asleep on the couch while my husband watched American football (Zzzzz…..)

When I got up, I tackled a Pinterest recipe for dinner. (Pinterest ADDICT right here!) That you can read about here: And then we watched the first hour of the Emmy’s which is fun but I feel the commercials are way too long, I have the attention span of a gnat. (I don’t actually know if a gnat has a short attention span or not, but it sounded good at the time.)

That sums up my weekend folks!

What's For Dinner? Hasselback Potatoes

I am a Pinterest-a-holic.  I found this fun variation of a baked potato and played with my own seasoning.  Sunday nights I like to try and do a stick to your ribs homecooked meal so these potatoes made for the perfect side.

Pre-heat the oven to 450.

Scrub your potatoes.


Slice potatoes in thin slices about 3/4's of the way through, don't slice all the way through.  They should all be attached together at the bottom.  It should look like an accordian or a bloomin' onion.

The cutting of the potatoes was tricky, at least it was for me as I am always worried I am going to cut my fingers off.

 
Drizzle with olive oil and season with your favourite seasoning.
 
We used curry seasoning.
 

 


 
Bake for about 45 minutes.
 


They were crispy on the outside edges and soft and moist on the inside.  It was like a baked potato meets fried potato. 

We served ours with garlic sour cream for dipping, bruschetta bread and steak.  Super tasty, pretty easy, I would make them again.

Cake Mix Cookies

I have two occasions where I needed cookies for this weekend.  The other night I decided to try making “Cake Mix Cookies” as I was out of flour but had cake mix.  I have seen a billion cookie recipes over the years that had the base of a cake mix but have yet to try some.  SUPER easy. 

Adapted from Betty Crocker.

Cake Mix Cookies

Yields about 4 dozen cookies. 

Ingredients:
 
1 box of cake mix of any flavour.  (I used Walmart's generic brand.  Tastes just as good as the name brand and usually cheaper.)
2 eggs
½ cup of softened margarine or butter
(I skipped the oil and the vanilla and I didn't have them.)
Your favourite frosting/icing
(You could also add chocolate chips, nuts etc. whatever you feel like!)

I made two different cake mixes: chocolate and yellow.

Directions:
 
Pre-heat oven to 350F.   (Heating directions may vary depending on oven!)

Grease your pans, or lay parchment paper on the pans for easier clean up.

DO NOT FOLLOW DIRECTIONS ON CAKE MIX BOX!

Add eggs and margarine.
 
 

Mix thoroughly until smooth.  (The yellow cake made a very tight cookie batter!)
 
 

Scoop walnut size batter and place on cookie sheets.  I scooped equal amount of each mixture for each cookie to have a marble cake effect. (I used about half a walnut size scoop for each flavour) I could have “marbleized’ the cookie batter but was tired and in a hurry. This gives the taste effect regardless. Yum.
 
I swear the pan is not dirty, it's stained.
 

Bake for 7 to 8 minutes.  
 
For years I never used a timer.  Not sure why not, greatest invention ever.  This bad boy came from Dollarama.  It has a magnent and a clip in case you walk away ... which I do a lot.
Take out of oven and leave on cookie sheet for 2 to 3 minutes.
 
 

Scoop off of cookie sheet, place on a baking rack or a tea towel and allow to cool.
 
 

Once cool use your favourite icing to make sandwich cookies or to enjoy alone.
 
 
 
 
Pour a tall glass of cold milk and dig in!  (Even if you have to bring the cookies somewhere the baker always has to have to have a taste test!)
 
 
Next time if I am pressed for time it's getting made as a cake and dumped in a pan.  A little less fussing that way.  Cookies however are easier to hand out, no need for plates and forks...  Overall these were easy, fun, a bit time consuming but yummy!  (I would love to try making these with a cherry chip cake mix.)

 

 

Jillian Michaels Ripped in 30

Jillian Michaels is going to own my ass for the next 30 days. I spent a week in the summer having my ass kicked by "Ripped in 30" as someone had posted it on YouTube.com. I loved it. Then someone took it down for copyright infringements. Bah. All summer long, I planned to buy myself a copy. I finally broke down earlier this week and ordered a copy off of Amazon.ca. It's currently on sale on Amazon for $10, you can buy Jillian Michaels Ripped in 30 here.  (Amazon.ca is the cheapest for almost every book or DVD.  In addition, free shipping on purchases over $25.)  I have done Jillian’s 30-Day Shred once all the way through, and found it to have been the most efficient inch buster.  (View it for free here on YouTube.com)  I have been using it ever since as a fill in for days when I can’t get to the gym, but not using it daily. I wanted to try something new so I decided to move to the Jillian’s next best-reviewed DVD. "Ripped in 30" has the similar premise of 30-Day Shred, Interval Circuit Training: strength, cardio and ab workouts; 30 minutes; sweat your ass off.  Wish me luck!



Bucket List Cross Off – I RODE A HORSE!!!

Shoulda been a cowboy…

My entire life I wanted to ride a horse.  When I was younger I used to BEG my parents for horseback riding lessons, I remember being about 8 and drawing up a “formal” proposal to have said lessons.  (Remember when I said I was a weird kid?  What eight year old hands their parents a business proposal?)  Unfortunately, it wasn’t in the cards as the expense was too great (which I totally understand and do not hold against my parents, in fact looking back now I wish I hadn’t begged them so much as I didn’t want them to feel bad that they couldn’t afford it.)  As a little girl, my Mom had a scary experience watching a rider lose control of a horse and I think that helped cement in her mind she didn’t want us to ride, so she used to keep us away from any pony ride at fairs, etc, which I can understand as well.  She said she knew I always knew I loved the horses as anytime there was a horse around I would be like “OHHH a HORSE!!!” and off I would bolt. Happy Rolphs’ has long been since one of my favourite places to visit, mostly because of the horses.  Needless to say, to “Ride a Horse” was added to my formal bucket list.

As an adult, the opportunity to ride a horse had never come up, until this summer, Groupon was my hero!  There was an hour horse-back trail ride for $19 a person or 2 people for $39 at Whispering Winds Equestrian Centre (it even sounds perfect, no?).  THEY STILL HAVE THE DEAL RUNNING!!!  They don’t expire until next summer, so buys ome now!  Buy them for a gift!  Buy multiples!!!  (Spoiler alert:  As you read this entry further, you will see that I HIGHLY RECOMMEND THIS HORSEBACK RIDING TRAILRIDE EXPERIENCE AT WHISPERING WINDS!!!)  I emailed them stating I have never been on a horse, ever, and asked if this would be a good fit for me; YES they said.  I called my sister and she said of course she would accompany me on this bucket list cross off!  (While she has been on a trail ride once in her life, I was excited to have her accompany me on this as I feel my bucket list items are far more fun and meaningful to cross off while being accompanied by my favourite people.)
 
 
We called and scheduled about two weeks ago, however the day came and it was pouring rain.  For your safety and the horses’ safety they do not ride them in the rain.  As an animal lover this made me respect Whispering Winds, as I wanted to make sure wherever I was going that the horses were well taken care of and treated with respect. Whispering Winds truly made me feel comfortable that their horses were well taken care of and that they were loved and treated great.

We rescheduled for Friday evening, the last ride of the day.  It was perfect.  The last day of summer had a beautiful fall like feel.  The leaves were starting to change and there was a nice breeze.

We drove my sister’s truck as “it felt more countryish.”  Tim McGraw was selected as the mood music, because I guess that’s just the Cowboy in us.  We arrived 15 minutes early as per their request.   We were greeted by the official people greeter; this sweetie pie knew we were dog people and seemed keen on us spending our whole visit with her.  Unfortunately, I didn’t get her name but we had a rousing game of fetch and then we went to find the horses. 




Our guide Sarah greeted us and had us outfitted with a helmet.  This also made me feel much more comfortable as when my sister had her trail ride down in Arizona and she was put on a horse, having never ridden before, WITHOUT a helmet, which would have scared the crap out of me.  Thank goodness Whispering Winds made us feel as safe as we possibly could.

While we waited for our horses, I have to admit: I started to get nervous.  Last week a co-worker felt the need to share a few whacky horse experiences he had growing up.  Unfortunately, these thoughts started to pop in my head.  (I am an overly-analytical, neurotic head case.)  They gave us the safety instructions and “driving” instructions, how to stop, go, turn, how to hold the reins, etc. We were told for safety reasons we couldn’t bring our cameras, which is understandable.  I was actually starting to question how I would take a picture and hold the reins anyways.

Mick
When my horse arrived I forgot to ask any questions about him.  I was just in awe.  His name was Mick, as in Mickey Mouse.  Mick was stunning.  He was a big, tall brown horse with white and black socks.  Our guide helped me to get up, and my fear of heights kicked in a bit.  (I can’t even climb a ladder.)  My sister’s horse was named Karma, he had the most interesting coat, it was sort of greyish gold.  Unfortunately we didn’t get a picture of him, but Karma was stunning as well.  As we started walking I debated asking to turn back (This was solely my fear of heights, I am a big chicken, and honestly I panic too much about little things).  But after about 20 feet I realized Mick knew what he was doing.  I didn’t have to do anything.  Never having sat in a saddle I kept thinking I was going to tip off, but I didn’t.  In fact I got quite comfortable.  Mick made me look like I was an accomplished horsewomen, but he did all of the work.

Our caravan had our guide in the lead, (her horse farted a few times, I am immature and thought this was aboslutely hilarious; of course horses fart, I just never heard one)  then a couple from St.Catharines, then me, then my sister and then an additional employee who brought up the rear.  I felt very safe and glad they had an additional, experienced rider behind us as she was able to give helpful instructions along the way.  The horse in front of me kept trying to have snacks along the way; thankfully Mick was able to stop on a dime as I wasn’t expecting the horse in front of me to come to a stop.  Mick knew what he was doing.

They took us along a beautiful field, and a pond trimmed with cat tails, golden rod, purple loosestrife and oaks starting to change to their fiery red.  We travelled around another field and then we went through a bit of a wooded area.  I kept wishing I had my camera, it offered breathtaking views.  We went around another two fields and then the sun started to set and I looked back at my sister and the instructor with the sun behind them, you couldn’t make out the riders but man it would have made for an amazing picture.  I embedded that shot in my brain.  On our way back to the barn we rounded a wooded area and there were 5 deer!  I don’t know why this excited me so much as I see deer at my parent’s house all the time, but it was just so peaceful and beautiful that it really added to the ambiance.  The deer just stared and horses just glanced at them, the horses didn't care as much as we did.  Jokingly, I asked our guide if she hired them to show up, she laughed and said they come out most evenings at that time.  It was a perfect way to end my first ever horse back ride.

When we got back to the barn they instructed us on how to dismount.  I was still in awe of Mick but finally remembered to ask some questions about him.  Mick is 19 years old and he was a national jumper; he jumps like eight foot fences and loves to jump.  The guide said he was suppose to be her horse but he loves children and he loves to teach so she put him in with her lesson horses and her trail horses.  I asked what type of horse he was, he was a Dutch something, I can’t hear very well. 
 
Thanks to Mick, Karma and the Whispering Winds Equestrian Centre, my sister and I were all smiles when we got back in the truck to drive home.  We kept marvelling what a perfect time of day it was, perfect time of year and what a great time we had.

What an amazing bucket list cross off!  I am so glad we bought that Groupon, even if my arse is still sore this morning!  :)

True ~ My Old Friend

Five years ago, we said good-bye to our friend and furry family member, True. Perhaps it seems weird for me to honour my dead dog, but unless you have/had a dog, you can’t fully understand how much these creatures can affect your life. They are pack animals, and when you make the commitment to invite a dog into your home, you become part of their pack and they in turn part of your family.

My Dad always had purebred German Sheppards while I was growing up. They are arguably the smartest breed out there. Our last purebred, Cassy, had inherited chronic ear problems. True was the first dog I had of mixed ancestry (mutt is just too harsh of a word.) She was a mix of German Sheppard and Beagle. True was healthy as a horse until the end. I am a firm believer, after True, that I will always get a dog of mixed ancestry. She inherited all of the good points of the two breeds and avoided some of inherent problems associated with “pure breeds”.

True was part of our family, and I still miss her. My sister and I got True when I was 14. She was the first dog I actively helped train and take care of. My Mom was her primary caregiver, and she in turn was my Mom’s right hand woman, never leaving her side, my Mom’s “Shadow” as she fondly called her. True helped me through a lot; she had an uncanny knack of reading us and knowing when we were upset and would come and sit with you. I know everyone says their dog was the smartest, and the greatest, but True truly was one of the smartest dogs I have ever met. She learned roll over in two tries.  Bang! You’re dead in four.  She listened to everything you said; she would stare right into your eyes, I swear she understood it all as well. (She was also always eavesdropping.)



True loved to race like a Grey Hound; if a tennis ball was thrown, it was her life’s mission to catch it before it touched the ground. Even as she aged she tried to race the tennis ball (we tried to not to throw the ball as far to humour her.) As the quintessential dog, True LOVED squirrels. It got to the point we had to spell SQUIRREL. The monkey was too darned smart for us as she learned to spell. She also learned to spell PARK. PARK was her favourite word in the dictionary, for PARK was where she could chase the tennis balls and run like the wind.

I hate you.  But I love you.

True was always eager to please, even if you could tell she was scared or hated something, she would do it for us, because she loved us. She most content when her whole family was at home; she could settle in on the couch for a cuddle and relax.
She was at her happiest up north, where she swam all day, chased tennis balls thrown in the water, chased chipmunks around the picnic table and could hang out with all of her favourite people. Female dogs are typically timid, not True. True was very assertive for a female, which was mostly good, but she did have a bit of a stubborn streak. She loved to get in the car, but got carsick EVERY single time. (My Mom got good at catching the projectile vomit in mid air with a grocery bag!)

True was a camera hog and loved to party with our family. Birthdays and Christmas, she got as excited as a little kid did. I think anytime we were happy, she was happy. The camera only came out at happy occasions, so she would associate seeing the camera at a fun function. She’d get so excited that my Mom took to opening the camera down the hall, so True wouldn’t hear the camera bag opening and start barking and jumping in excitement.

This is one of my favourite photos:  My 24th birthday resulted in my celebrating with just my parents and True. Both of my sisters couldn’t make it for dinner. True surprised my parents and me by chiming in to help my parents sing Happy Birthday. She cracked us up. She didn’t sing at anyone else’s birthday so I was quite honoured!

She loved to help wrap Christmas gifts (as well as UNwrap gifts); EVERY YEAR she had to lie down on the giftwrap every time I unrolled it. I would get her to move and she would sit beside me, watching intently. Her final Christmas with us was hilarious. She always loved playing with the left over gift-wrap and what ever treats Santa Paws brought her. She loved smelling the tree when it was brought in. She knew Christmas morning. She demonstrated so: we all got up in our pjs, yawning and snacking on breakfast treats and True randomly started barking and jumping in circles in the living room, it was like “Come on guys! Open gifts! I think there is one for me!” She KNEW it was Christmas morning.

I moved out during what turned out to be True's last summer, and while leaving my parents and my home was hard, (I am a big suck and totally a Mama and Dad’s girl) at least I got to talk to my parents on the phone every night. So when I would go visit them all on the weekend, it was True who I seemed to miss the most. She greeted me with such exuberance she missed me too.

True lived to be 12 years old and the last year of her life she was almost completely deaf, still in good shape and in good health (or so we thought). The weekend before she got sick, I visited her, unbeknownst to me, for one last social visit. I brought my new kitten with me and she was intrigued to watch him. (True LOVED cats). She left the kitten for a bit and came over and rested her head on my lap, looking up at me. She looked old and tired.

The following Thursday my parents found True dazed and lying on the kitchen floor in her own urine (She NEVER had accidents.  She was very proud of that!) She had had a seizure and when my parents took her to the vet, they discovered she had a big tumor in her stomach that was bleeding. The vet said they could operate but advised against it, that she most likely wouldn’t have survived the surgery and if she had, we would have been in the same situation in a few weeks time. My parents decided to have her put down. My parents and I were with her when she passed. We didn’t want her to be alone.

The following week I was at the vet’s office with my kitten and True’s ashes had returned that day. I had the honour of driving her up to my parent’s, one last car ride. “My Old Friend” was on the radio; forever embedding itself in my head as “True’s Song” sometimes life is just too coincidental. We honoured True by placing her urn under a tree in the woods on my parents’ property, and surrounded the urn with tennis balls. My Mom has since brought the urn into the house and placed it on a shelf. She didn’t want the urn out in the cold. My parents’ still debate what to do with the urn.

Thinking of True always makes me laugh or smile. I wanted to honour her with a paragraph or two, but it kept growing, how do you sum up 12 years of awesomeness with a few short sentences?

Fall is in the air!

As a proud Canadian, I love the fact that we have four distinct seasons. Last year it was as if we had summer and fall/spring, no winter unfortunately. I LOVE cold weather. I was so excited to read that they are predicting that we will have a REAL winter this year!


I only have patience for hot temperatures when there is no humidity and if I am beside a lake or a pool.  I hate that smothering feeling of the humidity; I am always looking forward to cooler temperatures.  Fall and winter are my two favourite seasons, followed by summer.  I have little desire for spring, as it’s grey, wet and muddy, spring really only gets interesting when everything actually turns green and the flowers start to bloom. 
 
Fall is similar in the wet and muddy but at least there are the beautiful colours of all the leaves changing; oranges, reds and yellows.  I love the smell of wet, dying leaves wafting throughout my neighbourhood on a cool, crisp breeze.  I love the big, orange pumpkins and the beautiful Mums.  I drool over thoughts of Thanksgiving: apple pie, turkey, stuffing, and all of the other yummy trimmings! (I have a kick ass pie recipe coming up that will be the delicious dessert for Thanksgiving dinner!)  And of course my beloved Hallowe’en! Next to Christmas, Hallowe’en has long since been my most favourite holiday.  I love the décor, the candy, and the scary movies (but not too scary as I have the overactive imagination of a 5 year old and can’t sleep if it’s too scary.) Year-round, our house has a shabby-chic vibe with a heavy dose of old horror movie.
I love wearing scarves and boots to work. I love when the rain pours down and I can curl up in a sweater, big cozy slippers and with my favourite blanket and a ghostly, murder mystery. Top it off with some hot chocolate and popcorn and I am in a blissful state. I love to make a big pot of stew and an apple crisp for dinner and have a Ghost Hunters marathon in the evening.  I love when we have to decide whether or not we turn the furnace on or if we just pile on more blankets.  The only thing missing from my house is a fireplace: gas, electric, wood burning; it doesn’t matter, I just want a roaring fire to add to the ambiance.
 
 
I love fall and can't wait for season to get underway!


Healthy-ish Peanut Butter Balls

My husband and I are always looking for ways to incorporate more oats in our diets (oats help lower cholesterol!) and for more protein as we were told we were not eating enough protein throughout the day. And we love Peanut Butter. So when I found this recipe I knew right away it was a winner, I just wanted to tweak it a bit. My “Healthy-ish Peanut Butter Balls" are adapted from my coupon guru Mrs.January.com’sHealthy Peanut Butter Balls Recipe

Ingredients:

- 1 Cup Quick Cooking Oats
- 1/2 Cup Ground Flax Seed ( I omit this as I don’t have any.)
Instead, I put in:
- 1/2 Cup Crushed Nuts (Almonds, Walnuts, mixed etc…)
AND
- 1 /2 Cup of Milk Chocolate Chips (When I first found this recipe, I instantly went “Oohh.. Those look good! I would add chocolate”. True Story. Always Milk Chocolate. Story of my life.)
- 1/2 Cup Peanut (I use chunky) Butter
- 1/3 Cup Honey
- 1 Teaspoon Vanilla (I omit this)
- 2 Teaspoons Cinnamon (I skipped this part, in fact I don’t think I read it as I would have so put these spices in)
- 1/2 Teaspoon Nutmeg (See above)
- 1/2 Cup Shredded (I use unsweetened) Coconut



 Instructions:

1. Add all of the ingredients into a bowl and mix well. (My husband CLAIMS he hates coconut, so I add the coconut in first and then dump the oats in to cover the coconut while he is not looking. He loves these Peanut Butter Balls, so shhh… don’t tell him!)


(We store our peanut butter in the fridge so I soften it in the microwave for about 10 seconds; I want it soft, not melted.)



 
 


2. Refrigerate for about 15 minutes.
3. Roll into balls and enjoy! (I try to keep one hand clean while assembling these; I prefer the squeeze in one fist and have oddly misshapen Peanut Butter Balls.)




Makes 12 peanut butter balls.
Supper yummy. I double the batch and freeze them for snacks throughout the week.
